This easy oatmeal pancake recipe is a tried and true recipe that has been a family favorite for over 17 years. With a mix of white and wheat flour, buttermilk, eggs, brown sugar, baking soda, oats, and butter, these pancakes are not only delicious but also nutritious. Today, I've got a simple, healthy, quick pancake recipe that has many variations depending on the ingredients you have on hand. I have made these pancakes every Saturday morning for the past 15+ years so it is a tried and true recipe! I recently shared this on my Ditch the Grocery Store Facebook page.


Easy Oatmeal Pancake Recipe


PREP TIME: 10 mins

COOK TIME: 5 mins

TOTAL TIME: 15 mins


INGREDIENTS

• 1.5 Cups White flour

• 1.5 Cups Wheat flour

• 3 Cups Buttermilk

• 3 Whole Eggs

• 1/3 Cup Brown sugar

• 2 Tsp Baking soda

• 2 Cups oats

• 1/3 Cup Butter


INSTRUCTIONS

1. Mix all ingredients in a mixer.

2. Pour 1/4 cup batter on a hot griddle. Sprinkle add-ins, if using.*

3. Cook until bubbles form, flip, and remove from griddle when golden brown.

4. Serve with maple syrup

*The add-ins are endless. My children love chocolate chips. I prefer blueberries. I thinly sliced apples during apple season and added a tsp. of cinnamon to the batter.


NOTES

Here are some variations.

Flour: You can use all white flour or all wheat flour. I usually use a combination of white and freshly ground wheat. I grind the wheat berries in my Vitamix. I have also used white flour combined with rye or oat flour.

Milk: you can use buttermilk or regular milk

Oil: you can use grape seed oil, melted coconut oil, vegetable oil, or butter.

Oats: you can use old-fashioned or quick

Sugar: you can use white, brown, or honey.


As you can see, this recipe is very versatile depending on what ingredients you have on hand.
